Ingredients
  

  • For the Cake:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 2 cups peeled chopped apples (about 2 medium apples)
  • 1 cup chopped pecans
  • For the Caramel Glaze:
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  • In a bowl, mix flour, baking soda, cinnamon, and nutmeg.
  • In a separate bowl, whisk together oil, granulated sugar, and brown sugar. Add eggs, one at a time, until smooth.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in apples and pecans.
  • Pour batter into prepared pan and bake for 45-50 minutes.
  • Meanwhile, prepare the glaze by melting butter and brown sugar in a saucepan. Stir in cream and let simmer for 2 minutes.
