Apple Pie Oatmeal Cookies

These Apple Pie Oatmeal Cookies are a wholesome twist on a classic dessert. Bursting with cozy cinnamon, fresh apple bits, and hearty oats, they deliver all the flavors of apple pie in a soft and chewy cookie.

Equipment

  • Large mixing bowl
  • Medium mixing bowl
  • Baking sheet
  • Parchment paper or silicone baking mat
  • Measuring cups and spoons
  • Mixing spoon or spatula
  • Cooling rack

Ingredients
  

  • 1 cup old-fashioned oats
  • 3/4 cup whole wheat flour or oat flour for gluten-free
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup finely diced apple peeled if preferred

Instructions
 

  • Preheat Oven:
  • Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • Mix Dry Ingredients:
  • In a large bowl, combine oats, flour, baking powder, cinnamon, nutmeg, and salt. Stir to mix well.
  • Prepare Wet Ingredients:
  • In a medium bowl, whisk together melted coconut oil, honey or maple syrup, egg, and vanilla extract.
  • Combine Ingredients:
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apple pieces.
  • Shape the Cookies:
  • Scoop 1 1/2 tablespoons of dough and roll into a ball. Flatten slightly and place on the prepared baking sheet, leaving space between each cookie.
  • Bake:
  • Bake in the preheated oven for 12–15 minutes, or until the cookies are set and lightly golden around the edges.
  • Cool:
  • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
