Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar

Equipment

  • Large mixing bowl
  • Hand mixer or stand mixer
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper
  • Mixing spatula

Method

  1. Prepare the Dough:
  2. In a large mixing bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
  3. Mix Wet Ingredients:
  4. In another bowl, combine granulated sugar, vegetable oil, eggs, and vanilla extract. Beat with a mixer until well combined and smooth.
  5. Combine Wet and Dry:
  6. Gradually add the dry ingredients to the wet ingredients, mixing until a thick dough forms. Cover the dough with plastic wrap and refrigerate for at least 2 hours or overnight.
  7. Preheat and Prep:
  8. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  9. Shape the Cookies:
  10. Scoop about 1 tablespoon of chilled dough and roll it into a ball. Repeat until all dough is used.
  11. Coat in Powdered Sugar:
  12. Roll each dough ball generously in powdered sugar, ensuring it’s completely coated.
  13. Bake:
  14. Arrange the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes or until the cookies are puffed and crinkled. The centers should still look slightly soft.
