Prepare the Dough:
In a large mixing bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
Mix Wet Ingredients:
In another bowl, combine granulated sugar, vegetable oil, eggs, and vanilla extract. Beat with a mixer until well combined and smooth.
Combine Wet and Dry:
Gradually add the dry ingredients to the wet ingredients, mixing until a thick dough forms. Cover the dough with plastic wrap and refrigerate for at least 2 hours or overnight.
Preheat and Prep:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Shape the Cookies:
Scoop about 1 tablespoon of chilled dough and roll it into a ball. Repeat until all dough is used.
Coat in Powdered Sugar:
Roll each dough ball generously in powdered sugar, ensuring it’s completely coated.
Bake:
Arrange the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes or until the cookies are puffed and crinkled. The centers should still look slightly soft.
