Ingredients

  • 2 cups cottage cheese (full-fat or 2%)
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey plus more for drizzling
  • 1/2 teaspoon ground cinnamon
  • 1 cup mixed fresh berries (strawberries blueberries, raspberries)
  • 1/2 cup granola
  • 2 tablespoons peanut butter
  • 1 tablespoon chia seeds

Method

  1. Check for liquid: Open the cottage cheese and check the surface for pooled liquid. If it looks watery, tip it into a mesh strainer for a minute or stir the liquid back in for a looser texture.
  2. Stir the curds smooth: Add the cottage cheese to a mixing bowl and stir hard with a fork for about 15 seconds, until the curds break down and the texture looks closer to a loose custard.
  3. Blend for a smooth base: For a smoother, yogurt-like base, transfer the cottage cheese to a blender and blend for 30 to 45 seconds, scraping the sides once, until it looks glossy instead of grainy. Skip this step if you like a bit of curd texture.
  4. Add vanilla and cinnamon: Stir in the vanilla extract and ground cinnamon until the mixture turns a pale golden color and smells lightly sweet and warm.
  5. Sweeten with honey: Add the honey a tablespoon at a time, tasting as you go since the tang of cottage cheese varies between brands.
  6. Divide into bowls: Spoon the sweetened cottage cheese into two serving bowls and smooth the tops with the back of a spoon.
  7. Add the berries: Scatter the mixed berries over the top of each bowl, pressing a few gently into the cottage cheese so the juice begins to bleed at the edges.
  8. Top with crunch: Sprinkle the granola and chia seeds evenly over the berries for a crunchy, textured finish.
  9. Finish and serve: Drizzle each bowl with a little more honey or a spoonful of peanut butter, then grab a spoon and dig in.
