Creamy Potato & Hamburger Soup is a cozy, hearty dish that’s rich and comforting without being overly heavy. This soup combines tender chunks of potatoes, savory ground beef, and vegetables in a creamy broth that’s slowly cooked to perfection in the Crockpot. It’s the ultimate meal to warm you up on cold days and can easily be adjusted to suit various tastes.

Ingredients
  

  • 1 lb lean ground beef
  • 4 cups diced potatoes Russet or Yukon Gold
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 4 cups chicken or beef broth
  • 1 cup heavy cream or milk for a lighter version
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Optional garnishes: Fresh parsley or chives shredded cheddar cheese

Method
 

  1. Brown the Beef: In a skillet, cook ground beef until browned. Drain any fat and set aside.
  2. Load the Crockpot: Add diced potatoes, carrots, celery, and onion to the Crockpot. Place browned beef on top of the vegetables.
  3. Add Seasonings and Broth: Sprinkle garlic, thyme, salt, and pepper over the ingredients. Pour in broth to cover.
  4. Slow Cook: Set Crockpot on low for 6-8 hours, or until potatoes and vegetables are tender.
  5. Stir in Cream: About 30 minutes before serving, add heavy cream and stir well.
  6. Serve: Garnish with parsley or chives and enjoy with warm bread or a salad.
