Ingredients

  • 1 1/2 pounds lean ground beef (90/10)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 2 cups cooked white rice
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1/2 cup chopped dill pickles
  • 1/4 cup thinly sliced red onion
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon pickle juice

Method

  1. Cook the rice: Start your rice according to package directions so it's warm and ready by the time the beef finishes cooking, about 18 minutes for white rice. Fluff with a fork and set aside.
  2. Heat the skillet: Set a large skillet over medium-high heat and let it get hot, about 2 minutes, before adding the beef. A hot pan is key to getting a good sear instead of steamed, gray meat.
  3. Sear the beef: Add the ground beef to the skillet and press it flat with a spatula. Let it sit undisturbed for 2-3 minutes, until a deep brown crust forms on the bottom.
  4. Break and season: Break the beef into crumbles and season with salt, pepper, and garlic powder. Continue cooking for another 3-4 minutes, until no pink remains.
  5. Drain excess fat: Tilt the pan and spoon off any excess fat to keep the beef from making the bowl greasy. This keeps the final dish clean and lets the sauce coat the beef instead of sliding off.
  6. Melt the cheese: Sprinkle the shredded cheddar evenly over the hot beef, cover the pan, and let it sit off heat for 1 minute, until the cheese turns glossy and soft.
  7. Make the sauce: In a small bowl, whisk together the mayonnaise, ketchup, mustard, and pickle juice until smooth and pale orange. Taste and adjust with extra pickle juice if you want more tang.
  8. Prep the vegetables: While the beef cooks, chop the romaine, halve the cherry tomatoes, and thinly slice the red onion. Keep everything separate so the bowls stay crisp when assembled.
  9. Build the bowls: Divide the rice among four bowls, then layer the lettuce, cheesy beef, tomatoes, pickles, and red onion on top. Work quickly while the beef is still warm.
  10. Add the sauce and serve: Drizzle the burger sauce generously over each bowl right before eating. Serve immediately while the beef is warm and the lettuce is still crisp.
