Lazy Pecan Pie Bars are a deliciously simple way to enjoy the flavors of classic pecan pie without the fuss of rolling out pie dough or dealing with a complicated filling. These bars are buttery, rich, and loaded with the caramelized, nutty goodness you’d expect from pecan pie.

Ingredients
  

  • For the Crust:
  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • For the Filling:
  • 3/4 cup unsalted butter melted
  • 1 1/2 cups brown sugar
  • 1/2 cup corn syrup
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups chopped pecans

Method
 

  1. Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  2. In a bowl, mix the flour, brown sugar, and softened butter until a crumbly dough forms. Press this mixture into the prepared pan and bake for 15-20 minutes.
  3. In a separate bowl, whisk together the melted butter, brown sugar, corn syrup, eggs, and vanilla extract. Fold in the chopped pecans.
  4. Pour the filling over the pre-baked crust and spread evenly. Bake for 25-30 minutes until the filling is set.
