No-Bake Strawberry Crunch Cheesecake is a refreshing and creamy dessert topped with an irresistible strawberry crunch layer. It’s not overly sweet, making it ideal for summer gatherings or when you need a cool, satisfying treat.
Springform pan (9-inch recommended)
Food processor or blender
Mixing bowls
Hand mixer or stand mixer
Rubber spatula
Measuring cups and spoons
Parchment paper (for lining the pan)
- Crust:
- 2 cups Golden Oreos or vanilla wafers crushed
- 1/2 cup unsalted butter melted
- Cheesecake Filling:
- 24 oz cream cheese softened
- 1 1/2 cups powdered sugar
- 2 tsp vanilla extract
- 1 1/2 cups fresh strawberries chopped
- 2 cups whipped topping
- Strawberry Crunch Topping:
- 1 1/2 cups freeze-dried strawberries
- 1 cup Golden Oreos or shortbread cookies
- 1/4 cup unsalted butter melted
Blend Golden Oreos or vanilla wafers into crumbs. Mix with melted butter and press into the bottom of a springform pan. Chill.
In a bowl, beat cream cheese with powdered sugar and vanilla until smooth. Fold in strawberries and whipped topping. Spread over crust and chill.
Pulse freeze-dried strawberries and cookies into crumbs. Mix in melted butter.
Sprinkle the topping over the cheesecake. Slice and serve chilled.
