  • Crust:
  • 2 cups Golden Oreos or vanilla wafers crushed
  • 1/2 cup unsalted butter melted
  • Cheesecake Filling:
  • 24 oz cream cheese softened
  • 1 1/2 cups powdered sugar
  • 2 tsp vanilla extract
  • 1 1/2 cups fresh strawberries chopped
  • 2 cups whipped topping
  • Strawberry Crunch Topping:
  • 1 1/2 cups freeze-dried strawberries
  • 1 cup Golden Oreos or shortbread cookies
  • 1/4 cup unsalted butter melted

Equipment

  • Springform pan (9-inch recommended)
  • Food processor or blender
  • Mixing bowls
  • Hand mixer or stand mixer
  • Rubber spatula
  • Measuring cups and spoons
  • Parchment paper (for lining the pan)

Method
 

  1. Blend Golden Oreos or vanilla wafers into crumbs. Mix with melted butter and press into the bottom of a springform pan. Chill.
  2. In a bowl, beat cream cheese with powdered sugar and vanilla until smooth. Fold in strawberries and whipped topping. Spread over crust and chill.
  3. Pulse freeze-dried strawberries and cookies into crumbs. Mix in melted butter.
  4. Sprinkle the topping over the cheesecake. Slice and serve chilled.
