Slow Cooker Beef Chili

Slow Cooker Beef Chili is the ultimate comfort food, packed with bold flavors and hearty ingredients.

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 3 garlic cloves minced
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 14.5 oz diced tomatoes
  • 2 tbsp tomato paste
  • 1 1/2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional toppings: shredded cheese sour cream, chopped green onions

Equipment

  • Slow cooker
  • Large skillet
  • Wooden spoon
  • Measuring cups and spoons
  • Cutting board and knife

Method
 

  1. Brown the Beef
  2. In a large skillet over medium heat, cook the ground beef until browned and no longer pink. Drain excess fat if necessary.
  3. Sauté the Vegetables
  4. Add the diced onion, bell peppers, and garlic to the skillet. Cook for 3-4 minutes, until softened and fragrant.
  5. Combine Ingredients in Slow Cooker
  6. Transfer the beef and sautéed vegetables to the slow cooker. Add the beans, diced tomatoes, tomato paste, beef broth, chili powder, cumin, smoked paprika, salt, and black pepper. Stir to combine.
  7. Cook
  8. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Stir occasionally if possible.
  9. Serve
  10. Ladle the chili into bowls and top with your favorite toppings, such as shredded cheese, sour cream, or chopped green onions.
