Slow Cooker Lasagna Soup

Slow Cooker Lasagna Soup has all the rich, comforting flavors of lasagna without the layering or baking.

Ingredients
  

  • 1 lb ground beef
  • 1 can 28 oz diced tomatoes
  • 1 can 15 oz tomato sauce
  • 4 cups beef or chicken broth
  • 1 tbsp Italian seasoning
  • 3 cloves garlic minced
  • 8 oz lasagna noodles broken into pieces
  • 1 cup shredded mozzarella cheese
  • Ricotta cheese for topping
  • Salt and pepper to taste

Equipment

  • Slow cooker
  • Large skillet
  • Spoon or spatula
  • Ladle
  • Cutting board and knife

Method
 

  1. Brown ground beef in a skillet. Drain and add to the slow cooker.
  2. Add tomatoes, tomato sauce, broth, Italian seasoning, and garlic. Stir and cook on low for 6-7 hours or high for 3-4 hours.
  3. About 30 minutes before serving, add broken lasagna noodles to the slow cooker.
  4. Stir in mozzarella cheese before serving. Top each bowl with a spoonful of ricotta, if desired.
