- Add chicken, rice, carrots, celery, onion, garlic, thyme, bay leaves, salt, and pepper to the slow cooker.
- Pour in chicken broth and stir to combine.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is cooked through.
- Shred chicken with forks and return to the soup.
- Stir in lemon juice and zest, adjusting to taste.
- Add spinach or kale, if using, and allow it to wilt.
