Slow Cooker Lemon Chicken & Rice Soup is a comforting and zesty dish, perfect for chilly days or when you need a cozy, nourishing meal. This soup combines tender chicken, fragrant herbs, and a hint of bright lemon for a refreshing twist.

Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 3/4 cup white or brown rice uncooked
  • 4 –5 cups low-sodium chicken broth
  • 3 carrots chopped
  • 2 celery stalks chopped
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 1 tsp dried thyme
  • 1 –2 bay leaves
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • Juice and zest of 1 lemon
  • 2 cups spinach or kale chopped (optional)
  • Fresh parsley for garnish

Equipment

Method
 

  1. Add chicken, rice, carrots, celery, onion, garlic, thyme, bay leaves, salt, and pepper to the slow cooker.
  2. Pour in chicken broth and stir to combine.
  3. Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is cooked through.
  4. Shred chicken with forks and return to the soup.
  5. Stir in lemon juice and zest, adjusting to taste.
  6. Add spinach or kale, if using, and allow it to wilt.
