Taco Casserole

This Taco Casserole has all your favorite taco ingredients – seasoned ground beef, cheese, and a little spice – layered into a delicious, bubbly bake.

Equipment

  • Large skillet
  • 9x13-inch baking dish
  • Measuring spoons and cups
  • Spatula

Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning or homemade seasoning blend
  • 1 cup salsa mild, medium, or hot, depending on your preference
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned and drained
  • 2 cups shredded cheese cheddar or Mexican blend
  • 3 cups crushed tortilla chips or use tortillas, cut into strips
  • Optional toppings: sour cream diced tomatoes, shredded lettuce, jalapeños, and sliced green onions

Instructions
 

  • Cook ground beef until browned. Drain excess fat.
  • Stir in taco seasoning and salsa. Add black beans and corn.
  • Preheat oven to 350°F (175°C). In a 9x13 inch baking dish, layer tortilla chips, beef mixture, and cheese, repeating layers.
  • Bake for 20-25 minutes, until cheese is melted.
  • Serve with optional toppings like sour cream, tomatoes, and lettuce.
