Taco Casserole
This Taco Casserole has all your favorite taco ingredients – seasoned ground beef, cheese, and a little spice – layered into a delicious, bubbly bake.
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning or homemade seasoning blend
- 1 cup salsa mild, medium, or hot, depending on your preference
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels fresh, frozen, or canned and drained
- 2 cups shredded cheese cheddar or Mexican blend
- 3 cups crushed tortilla chips or use tortillas, cut into strips
- Optional toppings: sour cream diced tomatoes, shredded lettuce, jalapeños, and sliced green onions
Cook ground beef until browned. Drain excess fat.
Stir in taco seasoning and salsa. Add black beans and corn.
Preheat oven to 350°F (175°C). In a 9x13 inch baking dish, layer tortilla chips, beef mixture, and cheese, repeating layers.
Bake for 20-25 minutes, until cheese is melted.
Serve with optional toppings like sour cream, tomatoes, and lettuce.
