Equipment

  • 9x13 inch baking pan or 8-inch square pan
  • Mixing bowls
  • Hand mixer or stand mixer

Ingredients
  

  • Cake:
  • 1 1/2 cups cake flour or 1 1/2 cups all-purpose flour minus 3 tbsp, plus 3 tbsp cornstarch
  • 1 1/2 cups granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup milk room temperature
  • 4 large egg whites room temperature
  • 2 tsp vanilla extract
  • Frosting:
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar sifted
  • 2-3 tbsp milk or heavy cream
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a baking pan.
  • Whisk together flour, sugar, baking powder, and salt.
  • In another bowl, beat butter until creamy; add sugar until fluffy.
  • Mix in egg whites and vanilla.
  • Add flour mixture and milk alternately. Pour batter into pan and bake for 25-30 minutes.
  • Cool completely, then frost with buttercream.
